古时候在盛产黄花菜的湖南省祁东县地区，每逢佳节，喝酒庆祝过后，来一道清炖黄花菜是必不可少的醒酒佳品。

等到黄花菜都凉了的意思就是主客人畅饮过后，有时候倒忘记那最后一道醒酒佳品了

于是就会有客人埋怨为什么还没上那道黄花菜，顺口就会说：快点啊，我等到黄花菜都凉了！

引申出来的含义也就是：

在等待某一件事或人时等了很久，就像菜席上等到黄花菜都凉了还没来一样，意思是说太晚了。
